Yabby Lake Winery located in Victoria’s Mornington Peninsula is designed for small and large batch production with a capacity 450 – 600 tonnes. The building accommodates offices and administration areas framing the surrounding landscape and a tasting room for invited guests with views to production areas. The new building sits in harmony with its surrounds and is defined by three primary volumes clustered in an arrangement that represents and links their distinctive functions. The programmatic planning and orientation of each volume optimises the operational requirements and solar orientation whilst framing key views on the site.
Environmental considerations have been embedded into the design, and we worked with the client and builder extensively throughout all stages of development to ensure the programmatic layout of the Fermentation Hall and Barrel Storage were as efficient as possible and the budget for processing areas was maintained. Successful managing of client’s programmatic desires and contractor’s buildability requirements ensured Stage 01 of the new Yabby Lake Winery was finished on time for processing before February 2015 vintage. Stage 02 is currently nearing completion.
